Healthy, tasty broccoli rabe

Have you seen broccoli rabe in your grocery store produce aisle but bypassed it because you didn't know what to do with it? Broccoli rabe is a nutritious leafy green -- that sports what looks like baby broccoli florets -- that is popular in Chinese and Italian cuisine, and can easily become a veggie staple for your healthy spring dishes. Broccoli rabe season is coming up, and we have a few key cooking tips and recipes to inspire you to purchase a few broccoli rabe stalks and get cooking.

Broccoli rabe Recipes

Simply Sauteed Broccoli Rabe

Makes 4 servings

1/2 cup olive oil
2 garlic cloves, sliced
1 pound broccoli rabe, rinsed and ends trimmed
Salt and pepper to taste

1. Heat olive oil in a large pot over medium heat. Add garlic and saute a few seconds until just golden.

2. Add broccoli rabe and gently stir. Place a lid on the pot and cook for 10 to 15 minutes or until broccoli rabe is tender. Season to taste with salt and pepper.

Penne with Broccoli Rabe and Sausage

Makes 4 servings

1 pound penne pasta
1 pound broccoli rabe, rinsed and ends trimmed
2 tablespoons olive oil
5 garlic cloves, thinly sliced
1/2 pound Italian sausage, sliced
Grated Parmesan cheese

1. Cook the pasta until al dente according to package directions. Drain and reserve in same pot.

2. Meanwhile, blanch broccoli rabe in a pot of boiling salted water until tender, about 7 minutes. Drain (saving 1 cup of the cooking liquid) and set aside.

3. Heat the olive oil in a skillet and saute garlic and sausage until sausage is cooked through. Pour the saved water from the broccoli rabe into the skillet with the sausage.

4. Add the sausage mixture into the pot with the pasta and add the broccoli rabe. Season to taste with salt. Cook, stirring gently, until heated through.

5. Spoon pasta into bowls and sprinkle with grated Parmesan cheese.

Ginger Sesame Broccoli Rabe

Makes 4 servings

1 pounds broccoli rabe, rinsed and ends trimmed
1 tablespoon canola oil
1 teaspoon minced peeled fresh ginger
2 garlic cloves, minced
1-1/2 teaspoons light sesame oil
Salt and crushed red pepper to taste

1. Blanch broccoli rabe in salted boiling water for 3 to 5 minutes or until tender. Drain and set aside.

2. Heat canola oil in a skillet and saute broccoli rabe, ginger and garlic for 2 to 3 minutes or until heated.

3. Take skillet off of heat and stir in sesame oil. Season to taste with salt and red pepper.
