Comfort food: Reuben sandwiches

A warm and toasty Reuben sandwich is definitely one of the most sublime comfort foods you can sink your teeth into. Rye bread piled high with corned beef, sauerkraut, melted Swiss cheese, and Russian dressing, there is nothing that hits the spot quite like a Reuben. Although it is hard to improve on a comfort food classic, a tasty creative update on the traditional Reuben sandwich can make this comfort food even better.

Classic Reuben

Makes 4 servings

1/3 cup mayonnaise
1-1/2 tablespoons ketchup
1-1/2 teaspoons prepared horseradish
1/2 teaspoon Worcestershire sauce
Salt and black pepper, to taste
2 tablespoons butter
8 slices rye bread
8 slices Swiss cheese
3/4 pound corned beef, thinly sliced
1 cup sauerkraut, drained

1. Combine mayonnaise with ketchup, horseradish, Worcestershire, and salt and pepper to taste. Reserve dressing.

2. Spread butter on one side of each piece of bread and place 4 pieces, buttered side down on a hot griddle or skillet. Place one slice of Swiss cheese on each piece of bread.

3. Top with half of the corned beef then the sauerkraut and dressing. Add the remaining corned beef and Swiss cheese. Top with remaining bread slices, buttered side up. Lightly press each sandwich with a spatula.

4. Cook for 1 to 2 minutes. Flip and continue to cook until cheese is melted and bread is golden on both sides.

Cuban Reuben

Makes 4 servings

4 small French bread loaves or 1 large loaf cut into 4 pieces
4 tablespoons mayonnaise
8 slices Gruyere cheese.
8 thin pieces roast pork
8 slices ham
1 cup sauerkraut, drained
4 tablespoons spicy brown mustard

1. Slice bread in half lengthwise and spread mayonnaise on the bottom of each piece.

2. Place one slice of cheese on the bottom halves of the bread. Top with half the roast pork and ham. Add sauerkraut and top with remaining pork, ham and cheese. Spread mustard on top halves of the bread and place on sandwich.

3. Arrange sandwiches on a hot buttered or oiled skillet or griddle and cook until cheese is melted, flipping to heat both sides of bread.

Thanksgiving Reuben

Makes 4 servings

4 round Italian rolls, cut in half
8 thin slices mozzarella cheese
8 slices turkey (or leftover turkey)
1 cup stuffing
1 cup brown gravy

1. Layer one slice of cheese and one slice of turkey on 4 pieces of bread. Top with stuffing. Place remaining turkey and cheese on top. Drizzle gravy overtop. Arrange remaining slices of bread on top of gravy.

2. Place sandwich on a hot buttered or oiled griddle or skillet and cook until cheese is melted, flipping sandwiches to cook both sides of bread.
