Squash Casserole

When making dinner, serve your main course with delicious side dishes created with organic vegetables and other yummy ingredients. Here are a couple recipes for organic side dishes that your whole family will love.

Squash casserole

Organic squash casserole

Ingredients:

1 large organic butternut squash
1 medium red organic onion
1/8 teaspoon cumin powder
1/8 teaspoon turmeric powder
1 teaspoon ground cinnamon
1/4 cup organic apple juice
2 tablespoons organic honey
2 tablespoons organic butter
1 teaspoon vanilla extract
1/4 cup slivered almonds

Directions:

1. Preheat oven to 350 degrees F.

2. Peel, seed and thinly slice squash. Peel and chop onion.

3. Combine squash, onion, cumin powder, turmeric powder and cinnamon in a large bowl. Place into a 2-1/2-quart casserole dish.

4. In a smaller bowl, whisk juice and honey. Add butter, vanilla and almonds and continue whisking.

5. Pour mixture over squash. Bake covered for 30 minutes. Uncovered and bake an additional 15 minutes until tender and brown.

Yams

Organic yams and cranberries

Ingredients:

1 pound organic yams, peeled, cut into 1-inch pieces
3/4 cup pure organic maple syrup
6 tablespoons organic butter (melted)
1/2 teaspoon grated orange peel
Salt and pepper
5 tablespoons dried organic cranberries

Directions:

1. Preheat oven to 350 degrees F.

2. Peel yams and cut into 1-inch slices.

3. Boil water and add yams. Cook for 3 to 4 minutes and drain.

4. Transfer yams to a 13x9x2-inch glass baking dish.

5. In a small mixing bowl, blend maple syrup, melted butter and orange peel.

6. Pour the mixture over the yams, and season with salt and pepper.

7. Bake yams (uncovered) in the oven for 30 minutes, stirring occasionally.

8. Stir in cranberries and continue baking for an additional 15 minutes.
