Rustic pizza

Flatbreads are similar to pizzas, but a little more rustic and simple. They can be grilled or baked in the oven and deliciously topped with any combination of flavors. Savory or sweet, flatbreads make a mouthwatering centerpiece meal as well as a nice accompaniment to a summer supper.

Flatbread with Chicken

Grilled Gruyere & Onion Flatbread

Makes 6 to 8 servings

Ingredients:
3/4 cup warm water
2 tablespoons olive oil
1 teaspoon salt
2 cups all-purpose flour
1 tablespoon granulated sugar
1/4 cup salted butter
2 medium sweet onions, quartered and sliced
3 garlic cloves, minced
2 teaspoons fresh tarragon, minced
1 cup shredded Gruyere cheese
2 tablespoons grated Asiago cheese

Directions:
1. Preheat grill to high heat. In a large bowl, combine water, olive oil, salt, flour and sugar. Mix well until a dough forms, taking care to not over mix.

2. Dump dough out of bowl onto a lightly floured surface and divide into 2 sections. Roll each section out flat into a rectangle or circle. Set aside, covered with a damp towel.

3. Melt butter in a skillet and sauté onions and garlic until golden. Stir in tarragon and cook 1 to 2 more minutes.

4. Spread onion mixture evenly on both pieces of dough. Sprinkle with both cheeses and place dough on grill. Close lid and cook for 15 to 20 minutes or until bottom of dough has grill marks on it and cheese is melted. Serve warm.

Grilled Chicken Flatbread

Makes 6 to 8 servings

Ingredients:
3/4 cup warm water
2 tablespoons olive oil
1 teaspoon salt
2 cups all-purpose flour
1 tablespoon granulated sugar
1 pound boneless, skinless chicken breast
1/2 cup hot sauce
3/4 cup crumbled blue cheese

Directions:
1. Preheat grill to medium-high. In a large bowl, combine water, olive oil, salt, flour, and sugar in a large bowl. Mix well until a dough forms, taking care to not over mix.

2. Take dough out of bowl and divide into 2 sections. Roll each section out flat into a rectangle or circle.

3. Place chicken breasts on grill. Brush with hot sauce and cook through until no longer pink in the middle, flipping once or twice. Remove chicken from grill and slice into thin strips.

4. Place chicken evenly over both pieces of dough. Top with blue cheese crumbles. Place dough on grill and cook 15 to 20 minutes or until dough has grill marks on bottom. Serve warm.

Grilled Nutella and Banana

Makes 6 to 8 servings

Ingredients:
3/4 cup warm water
1 teaspoon salt
2 cups all-purpose flour
1/2 cup granulated sugar plus 2 tablespoons
2 tablespoons unsalted butter
2 bananas, sliced
1 cup Nutella spread
Powdered sugar

Directions:
1. Combine water with olive oil, flour, and 1/2 cup sugar in a large bowl. Mix well until dough forms, but do not over mix.

2. Take dough out of bowl and divide into 2 sections. Roll each section out flat into a rectangle or circle.

3. Preheat grill to medium heat. Melt butter in a skillet and add bananas and sugar. Sauté until bananas are warmed through and caramelized.

4. Meanwhile, place dough on grill and cook 10 to 12 minutes.

5. Remove dough from grill and spread Nutella over it. Top with bananas and place back on grill to finish cooking. Cook 5 to 7 more minutes or until dough is fully cooked.
