Fried chicken recipes
Classic Crispy Fried Chicken
Makes 6 servings
Ingredients:
3 pounds chicken pieces, breasts, drumsticks, wings, thighs
6 cups buttermilk
1-1/2 to 2 cups vegetable shortening or canola oil
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
1. Place chicken pieces in a deep bowl and pour buttermilk over them, making sure all pieces are covered. Soak overnight in the refrigerator.
2. Heat shortening or oil in a deep skillet until temperature is 360 degrees F. (use a kitchen thermometer).
3. Meanwhile, combine flour with salt and pepper. Remove chicken pieces from buttermilk and dip in flour mixture then place in hot oil, skin side down.
4. Reduce the heat to medium-high and place a lid on the pan. Cook about 25 minutes or until golden brown, flipping if necessary. Remove lid and cook another 5 minutes. Remove with tongs and let
drain on a rack or brown paper bags.
Beer Battered Fried Chicken
Makes 6 servings
Ingredients:
1 cup all-purpose flour
1/2 teaspoon onion salt
1/4 teaspoon garlic powder
1/4-1/2 teaspoon cayenne pepper
1 beaten egg
1/2 cup beer
Canola oil or shortening
3 pounds chicken pieces, breasts, drumsticks, wings, thighs (soaked in buttermilk overnight if desired)
Directions:
1. Combine flour with onion salt, garlic powder and cayenne pepper. In a separate bowl, beat egg with beer and then mix into flour mixture.
2. Heat shortening or oil in a deep skillet until it reaches 360 degrees F.
3. Meanwhile, dip chicken pieces in batter and place in hot oil, skin side down.
4. Reduce the heat to medium-high and place a lid on the pan. Cook about 25 minutes or until golden brown, flipping if necessary. Remove lid and cook another 5 minutes. Remove chicken with tongs

2 teaspoons garlic powder, or to taste
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon paprika
1/2 cup bread crumbs
1 cup all-purpose flour
1/2 cup milk
1 egg
1 cup oil or shortening
3 pounds chicken pieces, breasts, drumsticks, wings, thighs (soaked in buttermilk overnight if desired)
Directions:
1. Combine garlic powder, pepper, salt, paprika, breadcrumbs and flour. In a separate bowl, whisk milk with egg.
2. Heat shortening or oil in a deep skillet until it reaches 360 degrees F.
3. Meanwhile, dip chicken pieces in batter and place in hot oil, skin side down.
