
Summer slaw recipes
Crisp Apple Slaw
Makes 4 servings
Ingredients:
1/3 cup apple cider vinegar
3 tablespoons olive oil
1 tablespoon grainy mustard
1 tablespoon granulated sugar
1 teaspoon salt
Freshly ground black pepper to taste
1 small head green cabbage, thinly sliced, tough ribs discarded
1/2 small head red cabbage, thinly sliced, tough ribs discarded
4 medium carrots, shredded
1 small red onion, minced
1 yellow bell pepper, seeded, thinly sliced
2 large Granny Smith apples, shredded
Directions:
1. In a small bowl, whisk together vinegar, oil, mustard, sugar, salt and pepper.
2. In a large bowl, combine cabbages, carrots, onion, bell pepper and apples.
3. Drizzle dressing over slaw and toss to combine. Chill until ready to serve.
Pineapple Slaw
Makes 4 servings
Ingredients:
1/3 cup aged balsamic vinegar
3 tablespoons olive oil
2 teaspoons granulated sugar
1/4 teaspoon celery seed salt
Freshly ground black pepper to taste
1 small head green cabbage, thinly sliced, tough ribs discarded
1/2 small head red cabbage, thinly sliced, tough ribs discarded
1 small fresh pineapple, peeled, cored, diced
1/4 cup finely diced green bell pepper
2 tablespoons finely diced red onion
Directions:
1. In a small bowl, whisk together vinegar, oil, sugar, celery salt and pepper.
2. In a large bowl, combine cabbages, pineapple, bell pepper and onion.
3. Drizzle dressing over slaw and toss to combine. Chill until ready to serve.
Cherry and Grape Coleslaw
Makes 4 servings
Ingredients:
1/4 cup olive oil
3 tablespoons light sour cream
2 tablespoons raspberry vinegar
Salt and freshly ground black pepper to taste
3 cups shredded green and red cabbage
1/2 cup shredded carrot
2 tablespoons minced chives
2 tablespoons flaked coconut
1/4 cup diced pitted sweet cherries
1/4 cup halved red and green grapes
Directions:
1. In a small bowl, whisk olive oil, sour cream and vinegar. Season to taste with salt and pepper.
2. In a large bowl, combine cabbage, carrot, chives and coconut. Add cherries and grapes and toss gently.
3. Drizzle with dressing and toss to combine. Chill until ready to serve.
