Fresh handmade guacamole - often made tableside - is all the rage in many Mexican restaurants, but you don't have to dine out to enjoy this luscious, rich condiment. Make it at home! Avocados are in season from April to September in most parts of the country, meaning now is the perfect time to get fun and funky with your guacamole. Here are some tasty twists on the classic guacamole recipe.

The basic ingredients of guacamole

All guacamole starts the same — with fresh ripe avocados. Most guacamole also contains some combination of the following ingredients: tomatoes, onion, some variety of peppers, cilantro, salt, and a little citrus, like lime juice.Some people like to add sour cream or plain yogurt to guacamole for an extra boost of creaminess, but ripe avocados are quite creamy enough.

Getting creative with guacamole

Once you acquire the basic ingredients, getting creative is where the fun starts.Guacamole is rich with flavor and can be made even more delicious by adding other tasty ingredients. Everything from pomegranate seeds and diced mango to capers and soy sauce can give this creamy condiment that extra flair.

Give your guacamole a delicious theme

A yummy way to update the classic guacamole recipe is to give your guac a theme. For example, a Greek-style recipe can include feta cheese and Kalamata olives, while an Indian-style recipe can include mint and honey.Just think about what your favorite ethic or regional foods are and then add a few of the most prominent ingredients to your mashed avocado.

Try different dippers

Also, when serving your festive guacamole, mix it up by swapping the standard tortilla chips with a dipper that pairs with your guacamole's flavor or cuisine theme. An Indian-style guacamole can be served with pita bread and a French-style guacamole can be served with crispy French bread.

Greek Guacamole

Makes 4 servingsIngredients:
2 ripe fresh California avocados, cut in half, seeded, peeled
1 tablespoon fresh lemon juice
1/4 cup small cherry tomatoes, halved or quartered
1/3 cup finely diced hot house cucumber, seeded (do not peel)
1/4 red onion, finely chopped
1/4 cup pitted, chopped Kalamata olives
1/4 cup crumbled Feta cheese
1 teaspoon chopped, fresh marjoram or oregano or half the amount driedDirections:
Coarsely mash avocados in a large bowl. Stir in lemon juice, tomatoes, cucumber, onion, olives, cheese and herbs. Serve immediately with fried or crisply baked pita chips.

Italian Guacamole

Makes 4 servingsIngredients:
2 ripe fresh California avocados, cut in half, seeded, peeled
1/2 tablespoon white wine vinegar
1 tablespoon shredded fresh basil leaves or 1 teaspoon dried
3 tablespoons grated Parmesan cheese
2 tablespoons chopped sun-dried tomato (packed in oil, drained)
2 tablespoons toasted pine nuts
1/2 teaspoon saltDirections:
Coarsely mash avocados in a large bowl. Stir in vinegar, basil, cheese, tomatoes, pine nuts and salt. Serve immediately with breadsticks or crispy Italian bread.

St. Louis Ragin' Guacamole

Makes 4 servingsIngredients:
2 ripe fresh California avocados, cut in half, seeded, peeled
1 tablespoon fresh lemon juice
10 drops red pepper sauce
1/2 teaspoon coarse garlic salt
1 ear corn (husk and silk removed), roasted or grilled
1 medium tomato, chopped
3 tablespoons chopped fresh cilantro or Italian parsley leaves
1 tablespoon finely chopped red onionDirections:
Coarsely mash avocados in a large bowl. Stir in lemon juice, red pepper sauce and garlic salt. Slice corn off of husks and stir into avocado mixture. Gently stir in tomato, herbs and onion. Serve immediately with fresh vegetables or tortilla chips.
