(page 4 of 4) Semolina PuddingMakes 4 servingsIngredients: 3 tablespoons butter or margarine 1 teaspoon ground cardamom 1 cup semolina 3/4 cup sugar 1/4 cup raisins, divided 2 tablespoons chopped cashews, divided 1-1/2 cups whole milk 1-1/2 cups water Directions: 1. Melt butter in a skillet. Add cardamom and heat for a few seconds. Add semolina, stirring constantly for a few seconds. Mix in sugar, 2 tablespoons of raisins, and 1 tablespoon of cashews. 2. Add water and milk and stir until thickened. Sprinkle with the rest of the raisins and cashews. Serve hot or chilled.
