There is almost nothing better than a slice of creamy, classic New York cheesecake. In the midst of a heat wave, however, who wants to be stuck in the kitchen with a hot oven? Well, raise your fork and prepare for summer dessert bliss. You can still have your (cheese)cake and eat it, too, with these simple no-bake cheesecake recipes.
No Bake Cheese Cake

No-bake Cheesecake Recipes


Easy No-bake Cheesecake

Makes 8 servings

Ingredients:
1 (8-ounce) package softened cream cheese
1 can Eagle Brand sweetened condensed milk
1/3 cup lemon juice
1/2 cup sour cream
1 graham cracker crust (recipe below)

Directions:
1. Beat cream cheese until fluffy in a medium bowl. Pour in milk, lemon juice and sour cream and mix until combined.

2. Chill mixture 20 minutes then spoon mixture into prepared crust. Chill 2 hours and top with any fresh fruit in season.

No-bake Chocolate Cheesecake

Makes 8 servings

Ingredients:
1 1/2 cups semisweet chocolate chips
11 ounces softened cream cheese
1/2 cup granulated sugar
1/4 cup softened butter or margarine
2 cups frozen whipped topping, thawed
1 graham cracker crust (recipe below)
More whipped topping or whipped cream for topping
Chocolate shavings, optional

Directions:
1. Melt chocolate chips in a saucepan over low heat, stirring constantly, until smooth.

2. Beat cream cheese, sugar and butter until smooth. Beat in melted chocolate on low speed. Gently fold in whipped topping until fully combined.

3. Spoon cream cheese mixture into prepared crust. Cover and chill until firm. Top with whipped topping and chocolate shavings.

Graham Cracker Crust

Makes 8 servings

Ingredients:
1 1/2 cups graham cracker crumbs
1/3 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/3 cup butter or margarine, melted

Directions:
Combine graham cracker crumbs, brown sugar and cinnamon. Mix in melted butter. Press mixture into the bottom of a springform pan. Chill until ready to use.
