Members of the gourd family, as are cucumbers and squash, melons differ from their kin in that they are generally sweet and considered a fruit. Melons sweet flavor and juicy flesh make them ideal treats in the heat of the summer.

With so many melon varieties now on the market, consumers can find a refreshing culinary thrill by trying out a new tasty melon every week. However, the tender and juicy flesh of melons does not stand up well to the rigors of a hot cookpot. Instead, enjoy melons as they grace the table solo, or puree them up into smoothies or even soups. This cool refreshing summer soup with honeydew is the perfect soup for a hot summer evening meal. It not only counters a swelter by quenching your thirst, its light and lively flavor will juicily satisfy your appetite.

Honeydew Melon Soup

Serves 4

Light and delicately flavored, this soup anoints a summer's meal, either as first course or dessert. Be sure the melon is chilled before you use it.

Ingredients:
1 ripe honeydew melon, skinned and cubed
1 cup fruity white wine
1 tablespoon honey
Juice of 1 lime
Mint leaves for garnish
Heavy cream for garnish

Directions:
Put the melon, wine, honey, and lime juice into a blender, and puree until smooth. Pour the soup into individual soup bowls, and garnish with mint leaves and a swirl of heavy cream.
