Classic Dishes Made Easy

Serving classic gourmet dishes does not mean you will be spending hours in the kitchen. With a few simple shortcuts, you can have elegant, wow-worthy meals on your table with far less effort than you can imagine. Try these delectable gourmet recipes the next time you want to impress your dinner guests or feed your family but don't have a lot of time to cook.

Gourmet Recipes

 

Coq Au Vin

Serves 4 Classic Dishes Made EasyIngredients:
6 slices bacon, cut into bite-size pieces
4 chicken breasts, bone-in, ribs attached
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 large onion, chopped
1 (8-ounce) package fresh mushrooms
1 cup red wine
1/2 cup chicken broth
1 teaspoon dried thyme
1 teaspoon dried basil Directions:
1. In a large skillet over medium-high heat, cook bacon until crispy. Transfer bacon to a stack of paper towels to drain. Reserve fat from bacon and keep skillet hot. 2. Season chicken with salt and pepper, then brown all sides in bacon drippings. Use tongs to transfer chicken to a large crock-pot. Add onions and mushrooms to the skillet and sauté in bacon drippings until tender. 3. Pour onion mixture over chicken in crock-pot. Mix wine, broth, herbs and pour over chicken and vegetables. Cover and cook 4 to 8 hours, depending on your schedule. Substitution: You can also make this same recipe using beef tips instead of chicken. Substitute beef broth for chicken broth.

Shrimp Scampi

Serves 6 Classic Dishes Made EasyIngredients:
1/2 cup (1 stick) butter or margarine
4 cloves garlic, minced
1/2 cup white wine
2 pounds shrimp, peeled, deveined Directions:
In a large skillet over medium heat, melt butter and cook garlic, stirring, until fragrant, about 3 minutes. Turn heat to low and add wine. Simmer on low until almost boiling, then add shrimp. Simmer until shrimp is bright pink, about 5 minutes. Serve over rice or pasta. Substitution: You can also substitute or add scallops to this recipe.
Time saving tip: The EZ-Peel shrimp bought in your grocer's freezer case makes this a quick and easy recipe for midweek. Thaw for 30 minutes, then peel shrimp under cold running water. Drain and pat dry with paper towels.

German Pot Roast

Serves 8 Classic Dishes Made EasyIngredients:
1 (3 to 4 pound) beef roast
1/3 cup ketchup
1/3 cup white vinegar
1/3 cup Worcestershire sauce
1 teaspoon ground cloves
1 teaspoon ground cinnamon Directions:
Place roast in a crock pot. Mix remaining ingredients, then pour over roast. Cook for 4 to 8 hours, depending on your schedule. Remove from liquid and serve with potato salad or egg noodles.

Beef Stroganoff

Serves 4 Ingredients:
1 pound ground beef
1 large onion
1 (8-ounce) package fresh mushrooms, sliced
1 can cream of mushroom soup
1 can golden mushroom soup
1 (8-ounce) container sour cream
Salt and pepper, to taste
1 (16-ounce) package egg noodles, cooked according to package Directions:
1. In a large skillet over high heat, brown ground beef. Drain fat and add onions and mushrooms. Cook, stirring frequently, until onions and mushrooms are tender. 2. Add soup, salt and pepper and simmer on low for several minutes, stirring occasionally. Just before serving add sour cream and mix well. 3. When mixture is hot, but not boiling, remove from heat. Serve over noodles.

Substitution: Try beef strips or beef tips for a change.

Cordon Bleu Casserole

Classic Dishes Made EasyServes 6 Ingredients:
6 boneless, skinless chicken breasts
3 slices deli ham
3 slices Swiss cheese
1 tablespoon olive oil
1 onion, chopped
2 cups small button mushrooms
1 can cream of mushroom soup
3 tablespoons sherry or red wine (broth may be substituted)
1 cup chicken-flavored stuffing cubes (like Pepperidge Farm stuffing mix) Directions:
1. Preheat oven to 350 degrees F. and coat a large casserole dish with olive oil or cooking spray. Place chicken in the bottom dish. Top with ham and cheese. 2. Heat oil in a large skillet over medium-high heat and cook onions, stirring frequently, for 2 minutes. Add mushrooms and cook until tender. 3. Add soup and sherry and stir well.
