Banana Cake: A Gluten-Free Recipe

Gluten-free banana cakeHere is a wonderful gluten-free banana cake that your whole family will love.

Ingredients

  • 4 eggs, separated
  • 1/4 cup butter
  • 1 cup packed brown sugar
  • 1 cup rice flour
  • Three mashed bananas
  • 1/2 cup soy milk
  • 1 tsp vanilla extract
  • 1/4 cup walnuts or almonds, ground
  • Fresh strawberries, sliced

Directions

  1. Preheat oven to 350 degrees F.
  2. Beat whites until stiff and set aside.
  3. Beat yolks, melted butter and sugar together in a separate bowl.
  4. Add flour, beating to a smooth consistency.
  5. Mix in mashed bananas, soy milk, vanilla and nuts.
  6. Fold mixture into whites.
  7. Grease bottom of a tube pan or square baking pan.
  8. Pour batter into pan and bake for 45 minutes.
  9. Turn pan upside down and allow to cool.
  10. Garnish with strawberries, if desired.

You can also substitute almond flour, potato flour, gluten-free all purpose flour or other flours without gluten.

most celiac people have more than gluten allergy!egg white ,soy,beans,corn,am I stuck for making a cake? also dairy allergy! any pies or desserts
