St Patrick's Day Irish Stew
Serves 8 Ingredients:
2 tablespoons vegetable oil
2 pounds boneless loin of lamb, trimmed, cut into chunks
2 onions, halved, thinly sliced
2 carrots, thinly sliced
1 turnip, peeled, diced
2 russet potatoes, scrubbed, diced
Salt and black pepper to taste
1 tablespoon fresh thyme leaves
1 tablespoon fresh minced parsley
3 cups water or lamb stock Directions:
1. Heat the oil in a stockpot over medium-high heat. Cook lamb on all sides until browned.
2. Add remaining ingredients, stirring to combine and cover tightly with a lid. Reduce heat to medium and cook until meat and vegetables are tender, about 2 hours.
3. Check occasionally and add more liquid, if necessary. Serve hot, garnished with fresh minced parsley and thyme.
