A creamy rich sauce for a low-carb Eggs Benedict or for drizzling over steamed veggies - mmmm, delish!

Hollandaise Sauce Over Asparagus

Low-carb Hollandaise

Makes 1 cup - 8 servings

Ingredients:
1/2 cup unsalted butter (1 stick)
3 large egg yolks
2 tablespoons lemon juice
1/4 teaspoon dry mustard
1/4 teaspoon salt
1/4 teaspoon white pepper or dash hot pepper sauce

Directions:
Melt butter until very hot, but not until it turns color. Place remaining ingredients in a blender and process until smooth. Add the hot butter very slowly, with machine running, until thickened. Add some hot water if it gets too thick.

Per serving (2 tablespoons): 0g carbs; 1g protein; 13g fat (7g saturated); 126 calories

The taste of butter is overwhelming. You're better off just putting a slab of butter on your food than this Hollandaise sauce.
