1 clove garlic
1/2 teaspoon salt
2 tablespoons olive oil
5 large tomatoes, seeded and chopped finely
1 small onion, diced
1/4 teaspoon black pepper
1 teaspoon dried parsley
1/2 teaspoon dried basil
2 tablespoons dry white wine
1-1/2 cups chicken stock
1 medium cucumber, peeled and diced
1 small green pepper, diced
1 tablespoon dry sherry
1. Crush and mince garlic with salt.
2. Add oil, tomatoes, onion, pepper, parsley, basil, wine and stock. Stir and let stand at room temperature for one hour.
3. Strain and discard any large solids (push tomato solids against strainer for largest yield). Add cucumber, pepper, and sherry. Chill.
