Buttermilk Oatcakes

Serves

Ingredients:
2 tablespoons oat flour
2 tablespoons almond flour
1/2 cup natural flavor whey protein powder
Pinch of salt
1 tablespoon granular Splenda
1/8 teaspoon baking powder
1/4 teaspoon baking soda
1 large egg
1 tablespoon walnut oil
1/3 - 1/2 cup buttermilk, as needed

Directions:
1. Whisk dry ingredients until mixed.

2. Make a well in the center, and break egg into well. Add oil and about half of the buttermilk. Whisk briskly until well-mixed.

3. Add additional buttermilk until desired consistency is reached. Fry on a very hot, greased griddle, turning once.
