Good-for-you guacamole

Sometimes you just need a little something different. Add a little zest to this popular party dip with the addition of tangy pink grapefruit for a fresher summertime taste. Try it heaped atop blackened swordfish or mahi-mahi for your next date-night in.

Grapefruit and avocados both have their own health benefits, making this an extremely healthy alternative to other, more fattening dips and salsas. Grapefruit helps increase your body's metabolism, reduce arthritis symptoms, prevent cancer, lower cholesterol levels and much more. While high in fat, avocados are filled with "good" fats. They help prevent some types of cancer, fight heart disease and stroke, promote eye health and more. Together, they form a powerhouse of good-for-you vitamins and minerals.

Grapefruit guacamole salsa recipe

Yields 1-1/2 cups

Ingredients:

  • 1 medium red onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar
  • 1 large Florida pink grapefruit, peeled, membrane removed, chopped
  • 1 or 2 jalapenos, minced
  • 1 garlic clove, minced
  • 1 small avocado, peeled, pitted, diced
  • 1 tablespoon minced fresh cilantro leaves
  • 1 tablespoon Florida grapefruit juice
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt

Directions:

  1. Saute the onion in olive oil until tender and just beginning to turn a light golden color.
  2. Stir in the sugar and continue to saute until glistening.
  3. Place in the bowl and mash it with the remaining ingredients.
  4. Serve with chips or as a condiment with your favorite Mexican dishes or fish and poultry.

I like that this is different, and healthier, from traditional guacamole. I'm always trying to find ways to put a spin on classic foods, and this does just that. Thanks, can't wait to try it out.
