Deviled Eggs

Take these Mexican-style deviled eggs to your next potluck.

Makes 30 deviled eggsIngredients:
1/2 red onion, finely chopped
1 plum tomato, chopped and seeded
1 jalapeno, seeded, minced
1/2 cup plus 2 tablespoons chipotle mayonnaise
1 tablespoon lime juice
1/2 teaspoon garlic salt
2 dashes hot pepper sauce
2 ripe avocados
15 hard boiled eggs, cooled, peeledDirections:
1. Combine onion, tomato, jalapeno, 1/2 cup chipotle mayonnaise, lime juice, garlic salt, and hot pepper sauce.2. In a separate bowl, mash avocado well. Add 1/4 cup of the onion mixture and mix well.3. Slice eggs in half and transfer yolks to a bowl. Mix yolks with the remaining onion mixture. Stir until smooth, adding the remaining 2 tablespoons chipotle mayonnaise.4. Fill half the eggs with one mixture, and the other half with the remaining mixture. Chill for one hour before serving.
