Try these microwaved Au Gratin Potatoes -- a streamlined version of the classic potato side. You'll be surprised how quick (and delicious) this dish is!

  • 4 medium russet or red potatoes
  • 1/2 cup milk
  • 1 pinch of salt and black pepper
  • 1/2 cup shredded cheese (Cheddar or Swiss suggested)

Directions Cut potatoes into 1/8-inch-thick slices. Pour enough milk into a microwave-safe dish to just cover the bottom. Lay some potato slices on the bottom of the dish in a single layer. Season with salt and pepper and sprinkle with cheese. Repeat layering of ingredients until all potatoes are used. Pour remaining milk over potatoes before adding the last of the cheese. Cover tightly with lid or plastic wrap. Microwave on high for 10 minutes (cooking time may vary depending on your microwave) or until potatoes are done. Use oven mitts or tongs to remove from microwave. Remove plastic wrap carefully to prevent burns from steam.

Here's how to fix this: Add 1/4 cup of the milk to the dish as per the instructions. Layer as directed. Do not top! Microwave on 70% for 20 minutes covered. Whisk into the remaining 1/4 cup of milk 1 tbsp of flour, 1/2 tsp salt, 1/4 tsp pepper. Pour over mixture, cover again, and microwave for a further 8 minutes on high. Top with cheese, dusting of Parmesan, and seasoned bread crumbs. Microwave uncovered for a final 3 minutes. Allow to sit for several minutes before serving.

10 minutes wasn't enough time to cook everything. The sauce was runny. I had to keep cooking the dish to make it work & I had to thicken the sauce. Wouldn't recommend this recipe.
