Crock Of Guac
This guacamole recipe comes to us courtesy of the six-time "Best of Boston" winner, chef Erwin Ramos of the Ole Mexican Grill. Chef Ramos makes his quacamole at the table, so patrons know it's fresh and delicious.
Ole Mexican Grill GuacamoleIngredients:
1 tablespoon chopped onion
1 tablespoon chopped seedless jalapeno
1 tablespoon chopped fresh cilantro
1/2 teaspoon sea salt
2 ripe avocados
1/2 cup peeled, seeded and chopped tomatoes
1 teaspoon lime juice Directions:
1. In a molcajete or food processor, work the onion, jalapeno, cilantro and salt until coarse 2. Halve and pit the avocados. Scoop the flesh into the onion mixture. Pulse gently in the food processor, or with a spoon, gently mix the avocado with the onion mixture. 3. Add the tomatoes and lime juice (if using a food processor, do this by hand) Serve with corn chips or soft heated corn tortillas.
