These salted caramel cupcakes with brown sugar frosting and chocolate-covered caramels are the ultimate crowd pleaser.

Even better — they look so complicated, everyone will think you slaved in the kitchen all day. The truth is, these gorgeous cupcakes are so surprisingly easy you'll have a batch made up in no time.

Salted caramel cupcakes with chocolate-covered caramels recipe

Yields 12

Ingredients:

For the salted caramel cupcakes

  • 1-1/2 cups flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 2 egg whites
  • 1 tablespoon vanilla
  • 1/2 cup milk
  • 12 soft caramels

For the brown sugar frosting

  • 1 cup softened unsalted butter
  • 3 cups powdered sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon of sea salt
  • 1 teaspoon vanilla
  • 2 tablespoons cream
For the cupcake topper
  • 12 soft caramels
  • 1/2 to 3.5 ounces dark chocolate
  • Salted caramel for topping
  • 1 teaspoon sea salt

Directions:

For the salted caramel cupcakes

  1. Preheat the oven to 350 degrees F.
  2. In a bowl, combine the flour, baking soda and salt, stirring to mix. Set it aside.
  3. Line a cupcake tin with liners.
  4. In a large bowl, cream the butter, brown sugar and granulated sugar.
  5. Add the eggs and egg whites slowly, blending after each egg.
  6. Add the vanilla extract.
  7. Start mixing in the dry mix alternating with the milk; remember to not over-mix.
  8. Fill each liner 3/4 of the way.
  9. Add caramel to the center and cover with the remaining mix.
  10. Bake for 18 to 20 minutes, or until the tops are puffy and golden and don’t jiggle when touched.
  11. Let the cupcakes cool completely.
For the brown sugar frosting
  1. In a bowl, cream the butter, brown sugar and powdered sugar together. Mix for a couple of minutes to break down the brown sugar so the frosting isn’t grainy.
  2. Add the sea salt and mix well. Make sure to scrape the sides of the bowl.
  3. Add the vanilla. If you want the frosting to have a really strong caramel flavor, you can add caramel extract instead.
  4. Add cream slowly until the frosting reaches the desired consistency.
  5. Frost the cooled cupcakes.
For the cupcake topper
  1. Melt the dark chocolate in the microwave, stirring it every 30 seconds
  2. Dip the caramels halfway in the chocolate and place them on parchment paper to harden.
  3. Drizzle salted caramel on the frosted cupcakes.
  4. Sprinkle sea salt on top of the caramel drizzle.
  5. Place a chocolate-covered caramel on top of each cupcake and serve.
