Change up the spuds this Thanksgiving with these new and improved mashed potatoes recipes
These are not your ordinary mashed potatoes. These are so packed with flavor they'll be the favorite dish on your holiday table.
Chipotle and cream cheese pair up to make this robust side dish. And it even comes with a hint of lime. There's just enough heat in these mashed potatoes to make you notice, and did I mention it comes with butter?
I like to make mashed potatoes with the skins left on for a more hearty texture. And of course, then I don't have to peel the potatoes.
When topped with a bit of lime zest, these spuds make for a spicy side dish that tastes wonderful.
In a medium-size pan, bring water to a boil, and add the potatoes. Let cook until they are tender when putting a fork through them (about 25 minutes).
Heat a small pan on medium heat, and add the butter and chipotle. Stir as the butter melts. Set aside for a moment.
To a medium-size mixing bowl, add the potatoes, milk, cream cheese, melted butter mixture, cumin, salt and pepper. Whip the potatoes with a mixer.
If the potatoes are too thick, add a little bit more milk.
Serve while hot, and top with butter and lime zest.
These mashed potatoes come packed with jalapeño jack cheese and cilantro. It's so good with the melted cheese inside the potatoes that you may want to eat them first before anything else that's on the table.
And of course these spuds have their share of butter added too.
