Satisfying your caffeine cravings during summer is easy peasy coconut-eesy. Just chill your coffee out with a scoop — or three — of coconut ice cream, a splash of cold milk and a sprinkle of white chocolate.

The summer heat can be a real coffee killer — sometimes throwing a couple of ice cubes into your caffeinated beverage just doesn't cut it. Nor should it. Instead embrace the season by giving your coffee a chilly tropical twist.

It's easy to turn coconut milk into creamy coconut ice cream. Then, using it as a base with white chocolate and milk as accompaniments, you can convert your coffee into your new favourite summer beverage.

Ingredients:

For the coconut ice cream:

  • 2 cans coconut milk
  • 1 cup white sugar
  • 1 tablespoon desiccated coconut
  • 1 teaspoon vanilla essence

For the iced coffee:

  • 2 to 3 teaspoons white chocolate, shaved
  • 1/2 cup brewed coffee
  • 2 to 3 scoops coconut ice cream (recipe below, needs to be made at least 6 hours in advance)
  • 1 cup whole milk, cold
  • 1 teaspoon desiccated coconut

Directions:

For the coconut ice cream:

  1. Pour the coconut milk, sugar, desiccated coconut and vanilla essence into a blender and mix until combined and smooth.
  2. Once blended, pour the ingredients into a freezer-safe container, cover and place in a freezer.
  3. After one hour, take the container out, mix or whisk the mixture then place it back in the freezer.
  4. After half an hour, repeat step 3.
  5. Keep remixing the mixture every half hour, until it is evenly frozen and creamy.

For the iced coffee:

  1. Place 1 or 2 teaspoons of shaved white chocolate at the bottom of a glass.
  2. Pour the coffee while it's still hot over the white chocolate, giving it a small stir.
  3. Slide one scoop of coconut ice cream into the coffee and immediately top up with the cold milk.
  4. Add more ice cream on top and garnish with the remaining white chocolate and the desiccated coconut. You can also add ice cubes if you like.
  5. Pop in a straw and get your delicious caffeine hit.
