Mango gooey butter cake is a yummy tropical dessert for summer

Tropical mango gooey butter cake: The perfect summer dessert. Made with a store-bought mango cake mix with lots of tropical goodies added. Like pineapple, coconut and macadamia nuts!

Pool toys, flip flops and umbrella drinks! That's what summer's all about. This year make the perfect summer dessert and bring the tropics to your backyard with this delicious easy tropical mango gooey butter cake! The crust is made from a cake mix, butter, coconut and macadamia nuts. It has a cookie texture. The filling is cream cheese, butter and pineapple. What better way to celebrate summer than with a tropical dessert?

Tropical mango gooey butter cake recipe

Ingredients:

For the cake:

  • Pillsbury tropical mango cake mix
  • 1 egg
  • 1 cup butter, melted
  • 1/2 cup coconut flakes
  • 1/2 cup macadamia nuts, chopped

For the filling:

  • 1 (8 ounce) package cream cheese, softened
  • 2 eggs
  • 1 teaspoon coconut extract
  • 1 cup butter, melted
  • 1 (16 ounce) box powdered sugar
  • 1 (8 ounce) can crushed pineapple, drained

Directions:

For the cake:

  1. Preheat oven to 350 degrees F.
  2. Spray a 9x13-inch baking dish with nonstick cooking spray.
  3. Combine the cake mix, egg and butter and mix well with an electric mixer.
  4. Fold in the coconut and nuts.
  5. Pat the mixture into the bottom of the prepared dish.

For the filling:

  1. In a large bowl, beat the cream cheese until smooth.
  2. Add the eggs, coconut extract and butter; beat together.
  3. Add the powdered sugar and mix well.
  4. Fold in pineapple.
  5. Spread over cake batter and bake for 40 to 45 minutes.
  6. Make sure not to overbake as the center should be a little gooey.
  7. Cool on wire rack before cutting into squares.
