You won't believe how easy these cocktail-inspired cupcakes are to make

We all know you can make cupcakes out of box cake mix, but what if I told you that you could make three different and totally delicious cupcakes out of one box? These are not your normal cupcakes either. They are inspired by summery cocktails — hello, delicious!

Now, because you're making three different cupcakes from one box of white cake mix, you need to make the mix as directed, and divide the batter into three bowls. Then you mix in your fillings and call it a day. Oh, and the same goes for the frosting too. Just pick up a tub of premade vanilla frosting, and work your stir-in magic.

Blueberry margarita cupcake recipe

These delicious blueberry margarita cupcakes are packed full of fresh fruit and lime flavor. Perfect for summer.

Yields 8

Prep time: 10 minutes | Bake time: 15 minutes | Total time: 25 minutes

Ingredients:

For the cupcakes

  • 1/3 prepared cake batter from a box mix
  • 1/3 cup halved fresh blueberries
  • 1 teaspoon flour
  • Zest from 1/2 a lime

For the frosting

  • 1/3 tub vanilla frosting
  • 2 teaspoons blueberry jam
  • 1 teaspoon lime zest
  • Fresh blueberries and lime wedges, for topping

Directions:

For the cupcakes

  1. Heat the oven to 350 degrees F, and spray a cupcake pan with nonstick spray.
  2. To a small bowl, add the batter.
  3. Toss the blueberries with the flour, and stir into the batter along with the fresh lime zest.
  4. Fill 8 cupcake holes in the baking pan 3/4 full.
  5. Bake for about 15 minutes, until done.

For the frosting

  1. In a small bowl, mix together the frosting, jam and lime zest.
  2. Top the cooled cupcakes with the frosting, and garnish with blueberries and lime wedges, if desired.

Piña colada cupcake recipe

These piña colada cupcakes are made with delicious toasted coconut and topped with vanilla frosting, more toasted coconut and fresh pineapple.

Prep time: 10 minutes | Bake time: 15 minutes | Total time: 25 minutes

Ingredients:

For the cupcakes

  • 1/3 prepared cake batter from a box mix
  • 1/3 cup toasted coconut
  • 1/2 teaspoon rum extract

For the frosting

  • 1/3 tub vanilla frosting
  • 1 tablespoon toasted coconut
  • 8 pineapple wedges

Directions:

For the cupcakes

  1. Heat the oven to 350 degrees F, and spray a cupcake pan with nonstick spray.
  2. To a small bowl, add the batter.
  3. Stir in the toasted coconut and rum extract.
  4. Fill 8 cupcake holes in the baking pan 3/4 full.
  5. Bake for about 15 minutes, until done.

For the frosting

  1. In a small bowl, mix together the frosting and toasted coconut.
  2. Top the cooled cupcakes with the frosting, and garnish with more toasted coconut and pineapple wedges, if desired.

These strawberry mojito cupcakes are packed full of fresh strawberries, mint and lime zest.

Ingredients:

For the cupcakes

  • 1/3 prepared cake batter from a box mix
  • 1/3 cup thinly sliced strawberries
  • 1 teaspoon flour
  • Zest from 1/2 a lime
  • 2 tablespoons finely minced fresh mint

For the frosting

  • 1/3 tub vanilla frosting
  • 1 teaspoon fresh minced mint
  • 1 teaspoon lime zest
  • Fresh strawberry wedges and mint leaves, for garnish

Directions:

For the cupcakes

  1. Heat the oven to 350 degrees F, and spray a cupcake pan with nonstick spray.

  3. Toss the strawberries with the flour, and stir into the batter along with the fresh mint and fresh lime zest.
  4. Fill 8 cupcake holes in the baking pan 3/4 full.
