These are muffins you don't see every day. Make the most of these bite-size treats by packing them with fun flavors. Cinnamon chips add unexpected flavor, and they pair well with the sweet marshmallow buried inside these muffins.

Cinnamon chip and marshmallow mini muffins might seem indulgent – and you can certainly enjoy them for dessert – but they make great little treats to go along with your morning coffee or milk too. You could even toss a few into your lunch bag for a little something special later in the day.

I think these treats make life a little better, and you can make the effort spent making them a little easier. They take only 10 minutes to bake, and you can save yourself a little extra time in the a.m. by mixing up the dry ingredients the night before. Just toss the mixture into a container with a lid, and wait until morning to combine it with the wet ingredients.

These seem like super-indulgent muffins, but I added flaxseed meal to the mix for a touch of something healthy. If you have whole flaxseeds, you can grind them up in a clean coffee grinder or a small food processor. You don't have to add the flaxseed meal, but why not?

You'll love the sweet and cinnamon flavors in these mini treats. Serve them as a snack, as dessert or with your morning yogurt. The make-ahead factor and quick baking time score big points!

Prep time: 5 minutes | Bake time: 10 minutes | Inactive time: 15 minutes | Total time: 30 minutes


  • 1-2/3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 tablespoon flaxseed meal (optional)
  • 1/4 teaspoon salt
  • 1/3 cup brown sugar, packed
  • 2/3 cup cinnamon chips
  • 2/3 cup mini marshmallows
  • 1 egg
  • 1/2 cup milk
  • 3 tablespoons coconut oil
  • 1 tablespoon honey


  1. Heat the oven to 400 degrees F. Line mini muffin tins with paper liners, and set aside.
  2. To a large bowl, add the flour, baking powder, flaxseed meal, brown sugar and salt. Use a whisk to thoroughly mix together.
  3. Add the cinnamon chips and marshmallows to the flour mixture, and mix to combine.
  4. To a separate bowl, add the egg, and beat it lightly. Add the milk, coconut oil and honey, and whisk to combine.
  5. Add the wet mixture to the dry mixture, and stir to form a thick batter.
  6. Spoon into the muffin tins, and bake for 10 minutes. Remove from the oven, top with 1 to 2 mini marshmallows, and place under the broiler. Watch carefully so the tops don't burn. You might want to put the muffins on the middle rack while the broiler is on. When the marshmallows have turned golden, remove from the oven.
  7. Let cool on a wire rack before serving.
