Berry cheesecake muffins offer big flavor in little form

I have been organizing BIG church events for over 25 years. From Thanksgiving dinners, Vacation Bible School, Fall Festivals, to Easter Brunch and Rodeo Fest.

These berry cheesecake muffins are the perfect spring muffin, full of berries with a wonderful cheesecake-like filling. I love taking a basket of these to brides on their wedding day. They're perfect for nervous tummies. Not too sweet, with just the right amount of flavor.

By combining the freshness of berries with everyone's favorite dessert (cheesecake), you have a winning muffin that you can be proud to serve for Easter brunch, Mother's Day, a baby shower or bridal shower.

Berry cheesecake muffins recipe

Prep time: 30 minutes | Cook time: 30 minutes | Yield: 16 muffins

Ingredients:

For the muffins:

  • 1/3 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup milk

For the cream cheese filling:

  • 2 (3 ounce) packages cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 egg
  • 3/4 cup fresh raspberries
  • 3/4 cup fresh blueberries

For the topping:

  • 1/4 cup all-purpose flour
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cold butter

Directions:

For the muffins:

  1. Preheat oven to 375 degrees F.
  2. Line a muffin tin with 15 cupcake liners.
  3. In a large mixing bowl, cream butter and sugar.
  4. Add eggs; beat well.
  5. Combine the flour, baking powder, salt and cinnamon; add to creamed mixture alternately with milk. Fill paper lined muffin cups half full.
  6. Drop a rounded tablespoonful of cream cheese mixture into the center of each muffin.
  7. Sprinkle topping over batter.
  8. Bake for 25 - 30 minutes or until a toothpick comes out clean.
  9. Cool for 5 minutes before removing from pans to wire racks.
  10. Refrigerate leftovers.

For the cream cheese filling:

  1. In a small mixing bowl, beat cream cheese, sugar and egg until smooth.
  2. Fold in the berries.

For the topping:

  1. Combine the flour, brown sugar and cinnamon in a small bowl; cut in butter until crumbly.
