Whenever I think of mad chopping skills, I picture Martin Yan of Yan Can Cook and his ultra-fast butcher knife. I'm no slouch with a knife, but if I tried to do what he does, I'd probably have a frequent visitor's pass at the ER.


But as they say, practice makes perfect (as long as you don't chop off any fingers). So grab some veggies, and get to work on mastering the tap chop, the rock chop and the cross chop.

These essential techniques will up your knife skills game instantly. Not only will your meal prep go faster, but better skills mean less chance of injury. And don't forget: A dull knife can actually be more dangerous than a sharp one, so keep those blades maintained. I don't want to run into anyone at the ER.
