Lighten up your dinner for the new year with this pita that's packed with greens, veggies, shrimp and a sweet chili sauce. Salad in a pocket is a great make-ahead meal too. Just prep the greens and veggies and cook the shrimp ahead of time, then assemble just before dinner.

Add some crispy Chinese noodles for good measure, and just before sinking your teeth into this pita, don't forget to top it with sweet chili sauce.

Thai shrimp salad pita with sweet chili sauce recipe

As if a Thai shrimp salad wasn't good enough, try it packed into a pita pocket with greens and veggies. Then top the pita with large shrimp, crispy Chinese noodles and sweet chili sauce, and you have yourself a light and easy meal.

Serves 2

Prep time: 20 minutes | Cook time: 5 minutes | Total time: 25 minutes

Ingredients:

For the sweet chili sauce

  • 1/4 teaspoon dried red pepper flakes
  • 2 garlic cloves, diced
  • 1/4 teaspoon peeled and diced ginger root
  • 3 tablespoons rice vinegar
  • 1 teaspoon soy sauce
  • 1 tablespoon sugar
  • 1/2 teaspoon Sriracha sauce
  • 1 tablespoon vinegar
  • 1/4 teaspoon cornstarch

For the shrimp salad pita

  • 12 large raw shrimp, shelled and deveined
  • 1 tablespoon olive oil
  • 2 pita pocket breads, cut in half and opened
  • 2-1/2 cups mixed greens
  • 1/2 cup chopped purple cabbage
  • 5 large radishes, shredded
  • 2 green onions, chopped
  • 1/2 cup Chinese crispy noodles
  • 1 lime, cut in quarters

Directions:

For the sweet chili sauce

  1. To a medium-size bowl, add all the ingredients, and whisk them together.
  2. Let chill in the refrigerator while making the shrimp.

For the shrimp salad pita

  1. Heat a large skillet on medium heat, and add the olive oil.
  2. Add the shrimp, and stir.
  3. Add 1 tablespoon of sweet chili sauce.
  4. Stir until the shrimp are completely cooked (about 4 to 5 minutes or more, depending on the size of the shrimp). Remove from the heat.
  5. Into each pita pocket, add the mixed greens, cabbage and radish.
  6. Top with crispy Chinese noodles and green onion.
  7. Add 3 shrimp on top of each pita pocket.
  8. Drizzle sweet chili sauce on top.
  9. Serve each pita with a quarter lime.
