Pad Thai gets a healthy makeover

How much do you love pad Thai? If your answer is "a lot," we're with you! This exotic dish is incredibly delicious. Unfortunately, however, it isn't necessarily the healthiest. Don't worry, though. Thanks to this nutritious version, you can enjoy pad Thai as much as you want.

As delicious as pad Thai is, most variations are made up of noodles, chicken/shrimp/tofu, sauce and perhaps a small sprinkling of vegetables. That's all well and good for a treat now and then, but if you want to enjoy the nutty goodness of pad Thai on a regular basis, then a healthier version is in order. When you switch over to zucchini noodles, throw in a whole lot of vegetables and top it all off with a homemade sauce, you're in for a light and nutritious new way to enjoy this traditional favourite.

Ingredients:

For the dressing:

  • 2 tablespoons all-natural peanut butter
  • 1 tablespoon tahini
  • 1/2 tablespoon soy sauce (or preferred soy sauce alternative)
  • Juice of 1 lime
  • 3 tablespoons water
  • 2 tablespoons cilantro
  • 1/4 teaspoon salt
  • 2 tablespoons peanuts, chopped

For the salad:

  • 1 green zucchini, cut using a spiral slicer
  • 1 yellow zucchini, cut using a spiral slicer
  • 1/2 a bell pepper, julienned
  • 1 medium carrot, shredded
  • 1-1/2 cups red cabbage, shredded
  • 1/4 cup cilantro, chopped
  • 2 tablespoons peanuts, chopped

Directions:

  1. In a small food processor, place all the dressing ingredients except for the chopped peanuts, and blend until fully combined. Transfer the mixture to a small bowl, and stir in the chopped peanuts.
  2. In a large bowl, toss together all the salad ingredients except for the chopped peanuts.
  3. Add in the salad dressing, and toss to combine. Transfer to bowls. Sprinkle the chopped peanuts evenly over each bowl for garnish, and serve.
