Simple egg salad

If you're cooking for picky eaters, then opting for a basic egg salad may be your safest bet. This simple egg salad has all the nutritious benefits of eggs without too many additions that some may turn up their noses at.

Ingredients:

  • 8 hard-boiled eggs, peeled and diced
  • 1/2 cup mayonnaise (more or less, to taste)
  • 1/2 tablespoon mustard
  • 2 tablespoons green onions, chopped
  • 2 tablespoons parsley, chopped
  • 1/3 cup celery, chopped
  • 1/2 teaspoon salt

Directions:

  1. Place diced hard-boiled eggs in a bowl, and slowly add the mayonnaise while continually mashing with a fork. Continue until the mixture achieves your desired consistency. More mayonnaise will provide a creamier texture, while less will allow the taste of the eggs to come through more strongly.
  2. Gently stir in the mustard, green onions, parsley, celery and salt.
  3. Spread the mixture over bread, pita or a wrap. Or store it in the fridge for later use.

Egg salad with a kick

Tired of boring egg salads and want something with a little more kick? Then this Mexican-inspired egg salad may be just what you're looking for.

Ingredients:

  • 8 hard-boiled eggs, peeled and diced
  • 1/2 cup mayonnaise (more or less, to taste)
  • 1/6 cup white onion, diced
  • 1/4 cup red pepper, diced
  • 2 tablespoons cilantro, chopped
  • 1/2 an avocado, cubed
  • 1/2 teaspoon crushed red pepper (more or less, to taste)
  • 1/2 teaspoon salt
  • 1/3 cup cheddar cheese, shredded

Directions:

  1. Place diced hard-boiled eggs in a bowl, and slowly add the mayonnaise while continually mashing with a fork. Continue until the mixture achieves your desired consistency. More mayonnaise will provide a creamier texture, while less will allow the taste of the eggs to come through more strongly.
  2. Gently stir in the white onion, red pepper, cilantro, avocado, crushed red pepper, salt and cheddar cheese.

Ingredients:

  • 8 hard-boiled eggs
  • 1/2 cup mayonnaise (more or less, to taste)
  • 1/4 cup red onion, diced
  • 1/4 cup cucumber, diced
  • 3 tablespoons sun-dried tomatoes, diced
  • 3 tablespoons pitted black olives, sliced
  • 1/3 cup feta cheese, crumbled
  • 1/2 teaspoon salt

Directions:

  1. Place diced hard-boiled eggs in a bowl, and slowly add the mayonnaise while continually mashing with a fork. Continue until the mixture achieves the desired consistency. More mayonnaise will provide a creamier texture, while less will allow the taste of the eggs to come through more strongly.
