Cut off any extra fat hanging around the body cavity of the chicken. Mix the selected ingredients, drizzle or spread over the chicken and rub it into the skin. If desired, you can add salt and pepper. Place the chicken (breast side up) in a large roasting pan.
Roast the chicken for 15 minutes in an oven preheated to 425 degrees F, then reduce the temperature to 375 and continue to roast until it is completely cooked through. You will know the chicken is completely cooked when the juices run clear and a meat thermometer registers 165 degrees F. This usually takes about 50 to 60 minutes.
Carefully remove the chicken from the oven and allow to cool before slicing to serve.
