Every time I go on a diet, the hardest thing to give up is cake. No matter what I do, I can't get the visions of rich chocolate cakes covered in buttercream frosting or seven-tier wedding cakes decorated with beautiful fondant out of my head. This time around, I've decided to lose weight while still eating cake. Oh yeah, it's a thing.

But I won't be eating the cakes I dream about. Instead, I'll be enjoying slices of these low-calorie cakes. Every serving has fewer than 175 calories. And no, I'm not kidding. That means you can enjoy it without guilt while still trying to lose those last few pounds. Now that's a win.

1. Apple-cardamom coffee cake recipe

Serves 12

Ingredients:

For the cake

  • 1-1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons cardamom
  • 1/2 teaspoon cinnamon
  • 3/4 cup skim milk
  • 2 tablespoons unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 large egg, lightly beaten
  • 1/2 cup diced Granny Smith apple
  • 1/2 cup diced pear
  • Cooking spray

For the glaze

  • 1 cup powdered sugar
  • 2 tablespoons light cream
  • 1/4 cup chopped pecans
  • 1/4 cup chopped apples

Directions:

  1. Preheat the oven to 350 degrees F. Grease a standard 8 x 8-inch round cake pan with nonstick cooking spray.
  2. In a large bowl, whisk together the flour, brown sugar, white sugar, baking powder, cardamom and cinnamon. Make a well in the center of the bowl, add in the milk, applesauce, vanilla and egg, and mix until combined.
  3. Add in the pear and apples. Pour the mixture into the prepared cake pan. Bake for about 45 minutes or until a toothpick inserted in the middle comes out clean.
  4. Place on a wire cooling rack, and let cool completely.
  5. Meanwhile, whisk together the powdered sugar and light cream. Drizzle the cake with the sugar glaze, and top with pecans and apples.

2. Three-ingredient pumpkin cake with low-fat frosting recipe

For the cake

Ingredients:

  • 1 box French vanilla cake mix
  • 1 (15 ounce) can pumpkin puree
  • 1-1/2 teaspoons cinnamon sugar

For the frosting

  • 3 ounces fat-free cream cheese
  • 2 ounces unsweetened applesauce
  • 1 ounce unsalted butter
  • 1-3/4 cups powdered sugar
  • 3/4 teaspoon vanilla extract

Directions:

  1. Preheat the oven to 350 degrees F. Grease a standard 9 x 13-inch cake pan with nonstick cooking spray.
  2. In a large bowl, mix together the cinnamon sugar, pumpkin and French vanilla cake mix . Pour the batter into the cake pan. Smooth over the top with the back of a spatula.
  3. Bake for about 28 to 30 minutes or until the cake springs back when touched. Let it cool in the pan for about 10 minutes.
  4. Meanwhile, beat together the cream cheese, applesauce, butter, sugar and vanilla. Once the cake has cooled, liberally cover it with frosting, and sprinkle it with cinnamon.

3. Lemon, blueberry and Greek yogurt Bundt cake recipe

Ingredients:

  • 3 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1-2/3 cups white sugar
  • 2 tablespoons unsalted butter
  • 2 tablespoons unsweetened applesauce
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 4 large eggs
  • 1/2 teaspoon vanilla
  • 8 ounces fat-free cottage cheese, pureed
  • 8 ounces fat-free sour cream
  • 2 cups fresh blueberries
  • 1 cup powdered sugar
  • 3 tablespoons lemon juice
  • Additional blueberries for garnish

Directions:

  1. Preheat the oven to 350 degrees F. Grease a standard-size Bundt pan with nonstick cooking spray.
  2. In a bowl, whisk together the flour, baking powder and baking soda until combined.
  3. In another bowl, beat together the butter, sugar, applesauce, lemon zest, lemon juice, eggs (1 at a time) and vanilla until combined. Mix in the cottage cheese and sour cream, and stir to combine.
  4. Make a well in the center of the flour mixture, add the egg-sour cream mixture, and stir to combine. Gently fold in the blueberries.
  5. Pour the batter into the prepared Bundt pan. Bake for about 1 hour or until a toothpick inserted in the center comes out clean.
  6. Let cool on a wire cooling rack. Once cooled, drizzle the cake with the glaze, and top with blueberries.
