Smoked salmon and arugula with creamy french onion cheese

My incurable curiosity about food and grumbling-stomach has driven me to study, taste and dive into the culinary Los Angele

​I love putting subtle spins on classics. Today I'm taking on bagels with lox, one of my favorites.

The flavors are so good: tangy cheese, smokey and silky salmon and the golden brown awesomeness of a toasted bagel. But here's the thing: A bagel with lox can be a little overwhelming and heavy, especially if you want a quick bite between meals. That's why I thought The Laughing Cow's Creamy Swiss French Onion would be perfect. It has a lovely, rich flavor from the french onion, and is the perfect contrast against a toasted English muffin.

Spread the English muffin with a wedge of cheese. Top with a sprinkling of dill, followed by the smoked salmon, arugula and other half of the muffin.
