Grilled veggies piled high on a hot dog, plus a little — no, make that a lot of — melted cheese is a meal in itself.

But it's a meal that deserves some special treatment, like being served with a glass of wine. Hot dogs and wine? Why not when they're glammed up like this? I especially like these hot dogs because I get a taste of all the delicious veggie toppings with every bite.

No forks allowed with this dog. OK, you can have a napkin, but just one.

Cheesy caramelized onion and grilled veggie hot dog recipe

Serves 2

Ingredients:

For the caramelized onions

  • 1/2 a red onion, sliced
  • 1 tablespoon butter
  • 1/2 teaspoon sugar
  • 3 dashes salt
  • 3 dashes ground black pepper

For the grilled veggies

  • 1 green bell pepper, cut into strips
  • 1/2 red bell pepper, cut into strips
  • 3 garlic cloves, sliced
  • 1 zucchini, cut into thick strips
  • 1/2 teaspoon dried oregano leaves
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 4 dashes salt
  • 4 dashes ground black pepper

For the hot dogs

  • 2 hot dog buns
  • 2 hot dogs, heated
  • Grilled veggies
  • 1-1/2 cups shredded Monterey Jack cheese
  • Caramelized onions

Directions:

For the caramelized onions

  1. Heat a medium-size skillet on low to medium heat, and add the butter.
  2. Add the onions, sugar, salt and pepper.
  3. Continuously stir as the onions cook.
  4. Let the onions cook until they turn translucent with lightly browned edges (about 10 to 14 minutes). Set aside.

For the grilled veggies

  1. Heat a medium-size skillet on medium heat, and add the olive oil.
  2. Add the green and red bell peppers.
  3. Stir as they cook for about 5 minutes. Add the balsamic vinegar, and stir.
  4. Continue to stir until the bell peppers start to soften up just a little (about 4 more minutes).
  5. Add the zucchini and the garlic. Stir.
  6. Continue to stir until the veggies start to lightly brown (about 3 more minutes). Remove from the heat, and set aside.

For the hot dogs

  1. Preheat the oven to 350 degrees F.
  2. Add the hot dogs to the buns, and set them onto a small cookie sheet or oven-safe dish.
  3. Top with the grilled veggies and the cheese.
  4. Bake until the cheese starts to melt.
  5. Top with caramelized onions, and serve.
