Deconstructed sandwiches-on-a-stick are so much better than brown-baggin' it

Take your sandwich from simple to fanciful with these artfully arranged sandwich skewers. Try a deconstructed caprese sandwich, a turkey-cucumber sandwich or a good old PB&J for the kids.

Serving sandwiches in bite-size portions on a stick is a fun way to break out of the sandwich routine. Whether serving dainty caprese or turkey-cucumber sandwiches for a summer tea party or peanut butter and jelly for your kid's lunch, this presentation is sure to be a hit.

For the caprese sandwich, we start by slicing a couple of cherry tomatoes in half. Make sure you slice each tomato so that the stem end will be one of the halves of the tomato, as this makes it easier to hollow out the tomato.

Use the tip of your knife to just slice through where the seed membrane attaches to the tomato.

Then use a small spoon or your finger to scoop out all the seeds of each tomato half.

Take a rounded teaspoon of goat cheese, and roll it between your hands to form a ball.

Place the ball of cheese into a hollowed-out tomato half. Repeat with the remaining cheese and tomato halves.

Slice your focaccia into cubes. You will need some for the turkey-cucumber sandwich as well.

Place a bread cube and then a cheese-filled tomato half onto a skewer. Thread a basil leaf, accordion style, onto the skewer.

Repeat with 3 more sets of bread, tomato and basil. Serve with olive oil and vinegar for drizzling.

For the turkey-cucumber sandwich, use a vegetable peeler to slice off thin strips of cucumber.

Spread a piece of turkey lunch meat with cream cheese, and then slice it into strips about the same width as your cucumber strips.

Place a strip of turkey, cream cheese side down, onto a strip of cucumber, and slice the cucumber to be just slightly longer than the turkey.

Place an olive at the end of the turkey.

Roll the turkey and cucumber strips tightly around the olive. Repeat with additional olives, cucumber and turkey.

Place a bread cube onto a skewer, and then thread a piece of lettuce, accordion style, onto the skewer.

Slide the turkey, cucumber and olive roll onto the skewer. Repeat with additional bread cubes, lettuce and turkey rolls, finishing with a bread cube.

For the peanut butter and jelly skewer, start by making a regular peanut butter and jelly sandwich. Use a shot glass or small, round cookie cutter to cut out 4 circles of sandwich.

Place a circle of sandwich onto the skewer, followed by a blueberry, a slice of banana and then another blueberry.

Top the skewer with a sandwich round and then another blueberry.

Serves 1

Ingredients:

  • 2 cherry tomatoes

  • 3 green olives with pimentos
  • Focaccia, cut into cubes
  • 3 strips lettuce

Instructions:

  • 2 tablespoons berry jelly or jam

Instructions:

  1. Make a regular peanut butter and jelly sandwich, and then use a shot glass or small, round cookie cutter to cut out 4 circles of sandwich.
  2. Place a circle of sandwich onto the skewer, followed by a blueberry, a slice of banana and then another blueberry.
  3. Repeat, topping the skewer with a sandwich round and another blueberry.
