5 Twists on deviled eggs

Got an overabundance of hard-boiled Easter eggs? Try one of these creative twists on the deviled egg.

If you’ve got kids, or just a hearty sense of nostalgia, you’ll likely find yourself with dozens of leftover, brightly colored eggs that have been hard-boiled and left out after a rousing egg hunt on Easter Sunday. Figuring out what to do with the extra hard-boiled eggs can be a bear, especially when the standard deviled egg recipe gets tired. Fortunately, deviled eggs are super versatile and leave dozens upon dozens of options. Think outside the box and play with your deviled eggs instead of just sticking with classic, yet tiring, tradition. A great base of hard-boiled egg yolks and mayo will set you on the right path. Set out tons of ingredients and get to playing. Try one of these options for a great new twist.

Sriracha spiced deviled eggs

Serves approximately 12

Ingredients:

  • 1 dozen eggs, hard-boiled
  • 1/2 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons Sriracha sauce plus additional for garnish

Directions:

Gently crack and peel the dozen hard-boiled eggs. Using a sharp knife, slice the egg in half. Place the yolks in a bowl and set the whites on a plate. Repeat this with the entire dozen. Place the mayonnaise, salt, black pepper and 2 tablespoons Sriracha sauce in with the yolks and use a fork to mash the eggs until the mixture is thoroughly combined. Set the whites on your serving platter. Transfer the egg yolk mixture into a pastry bag fitted with a star tip. Pipe a bit into the center of each egg white. Top with an additional squirt of Sriracha.

Asian style hoisin eggs

Serves approximately 12

Ingredients:

  • 1 dozen eggs, hard-boiled
  • 1/2 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder
  • 1 green onion, thinly sliced
  • 2 tablespoons hoisin sauce plus additional for garnish

Directions:

Gently crack and peel the dozen hard-boiled eggs. Using a sharp knife, slice the egg in half. Place the yolk in a bowl and set the whites on a plate. Repeat this with the entire dozen. Place the mayonnaise, salt, ground ginger, garlic powder, green onion and 2 tablespoons hoisin sauce in with the egg yolks. Mash with the fork and stir to thoroughly combine. Spread a bit of the mixture onto each egg white. Top with additional hoisin sauce and a sprinkling of green onion if you’d like.

Chipotle mustard spicy devil

Serves 12

Ingredients:

  • 1 dozen eggs, hard-boiled
  • 1/2 cup mayonnaise
  • 1/4 teaspoon salt
  • 3 tablespoons chipotle mustard
  • chipotle powder for garnish

Directions:

Gently crack and peel the dozen hard-boiled eggs. Using a sharp knife, slice the egg in half. Place the yolk in a bowl and set the whites on a plate. Repeat this with the entire dozen. Place the mayonnaise, salt and chipotle mustard in with the yolks and mash well until thoroughly combined. Spoon some onto each egg white. Top each with a sprinkling of chipotle powder.

Smoked paprika spicy devil

Serves 12

Ingredients:

  • 1 dozen eggs, hard-boiled
  • 1/2 cup mayonnaise
  • 1/4 teaspoon salt
  • 1 to 2 tablespoons smoked paprika plus additional for garnish

Directions:

Gently crack and peel the dozen hard-boiled eggs. Using a sharp knife, slice the egg in half. Place the yolk in a bowl and set the whites on a plate. Repeat this with the entire dozen. Place the mayonnaise, salt, and smoked paprika in with the yolks and mash well until thoroughly combined. Spoon some onto each egg white. Top each with a sprinkling of additional smoked paprika.

Garam masala spicy devils

Serves 12

Ingredients:

  • 1 dozen eggs, hard-boiled
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/4 teaspoon salt
  • 1 to 2 tablespoons garam masala plus additional for garnish

Directions:

Gently crack and peel the dozen hard-boiled eggs. Using a sharp knife, slice the egg in half. Place the yolk in a bowl and set the whites on a plate. Repeat this with the entire dozen. Place the mayonnaise, Greek yogurt, salt and garam masala in with the yolks and mash well until thoroughly combined. Spoon some onto each egg white. Top each with extra garam masala to garnish.
