Comforting chicken dinner with a twist

Move over, white gravy, and make way for green chile gravy. This tortilla chicken recipe with gravy will make everything better.

Comforting chicken dinner with a twist

Every once in a while, I try to get out of the house for a date night. Those nights are starting to happen less and less with our busy schedules. I decided to bring the date night to us with a night in. This tortilla-crusted chicken packs a nice, crusty layer on the outside while being moist on the inside. Smother it with green chile gravy and cheese to complete this dish.

Grab a glass of wine and your significant other for a comforting chicken meal made in your kitchen.

Tortilla-crusted chicken with green chile gravy recipe

Serves 4-5

For the chicken

  • 1 cup chopped tortilla chips
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 egg white
  • 2 tablespoons olive oil
  • 1.5 pounds chicken breasts, thinly sliced

For the gravy

  • 1/4 cup unsalted butter
  • 1/4 cup plus 1 tablespoon flour
  • 1/4 teaspoon salt
  • 1 (4 ounce) can chopped green chiles
  • 1 cup whole milk
  • Shredded cheddar cheese

For the chicken

  1. Add the chips to a food processor, and pulse until well chopped.
  2. In a shallow dish, mix together the chopped chips, salt, garlic powder and paprika.
  3. In another shallow bowl, add the egg white.
  4. To an iron skillet over medium heat, add the olive oil.
  5. Dip the chicken slices into the egg white wash and then into the tortilla chip mixture. Coat well, and then place into the skillet. Cook 8 minutes on each side or until done.

For the gravy

  1. Once the chicken is done, remove it from the skillet, and set it aside.
  2. Lower the heat, and melt the butter in the skillet. Whisk in the flour and salt, and continue to cook for 3 to 4 minutes.
  3. Stir in the green chiles and milk. Whisk for another 2 minutes, and then serve over the cooked chicken.
  4. Top gravy with the shredded cheese.
