When I was mainly a vegetarian, I often found myself experimenting with vegan foods and realizing how much I love them. Sometimes when people hear the word "vegan," they cringe and think, "What do you eat, exactly?" Here I've taken the guesswork out of starting your day with plant-based recipes by sharing fuss-free, completely vegan breakfast options. Feel free to adjust flavors or ingredients to suit your personal tastes. Who knew eating vegan could be so easy?

Overnight banana oats recipe

Overnight banana oats recipe

Serves 2

Ingredients:

  • 1 banana, mashed
  • 1/2 cup gluten-free quick oats
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flaxseeds
  • 3/4 cup vanilla almond milk
  • 1/4 teaspoon cinnamon
  • Pinch sea salt
  • Maple syrup or agave for sweetening

Directions:

  1. In a bowl, add all the ingredients, and mix very well.
  2. Cover and place in the refrigerator overnight.
  3. Mix again before serving, and garnish with fresh fruit, nuts and maple syrup.

Simple avocado toast with cracked pepper recipe

Serves 2

Ingredients:

  • 2 slices sprouted grain bread
  • 1 ripe avocado, pitted and sliced
  • Freshly ground pepper
  • Sea salt

Directions:

  1. Toast the bread in a toaster until golden brown.
  2. Divide the avocado slices between the 2 slices of bread, and sprinkle generously with the pepper and sea salt.
  3. Cut into triangles, and serve.

Serves 2

Ingredients:

  • 1/2 cup frozen dragon fruit puree
  • 1 banana
  • 1/4 cup fresh pineapple
  • 1/2 cup fresh orange juice
  • 1 tablespoon raw agave nectar

Directions:

  1. Add all the ingredients to a high-speed blender such as a Vitamix.
  2. Blend on high until the mixture is smooth and creamy and no lumps remain.
  3. Divide the smoothie between 2 small bowls.
  4. Garnish with fresh fruits, granola, seeds or nuts if desired.

Ingredients:

  • 1 (6 ounce) container vanilla coconut milk-based yogurt
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons chia seeds

  • 1-2 teaspoons pure maple syrup or raw agave, depending on desired sweetness
  • 1/2 fresh mango, diced
  • 2 fresh kiwifruit, sliced
  • 1 banana, sliced
  • 2 tablespoons hemp seeds (optional)

Directions:

  1. In a bowl, add all the ingredients, and mix very well.
  2. Cover and chill overnight in the refrigerator.
  3. Mix again before serving, and divide the pudding between 2 bowls.
  4. Garnish with fresh mango, kiwifruit, bananas and hemp seeds. Serve immediately.

Easy tofu scramble recipe

Easy tofu scramble recipe

Serves 4-6

Ingredients:

  • 1 (16 ounce) package extra-firm sprouted tofu, crumbled (I used Trader Joe's brand)
  • 1 tablespoon organic coconut oil
  • 1 green bell pepper, diced
  • 1 red bell pepper diced
  • 1 small red onion, diced
  • 1 cup mushrooms, sliced
  • 1/2 cup corn kernels
  • 1/4 cup thinly sliced green onions
  • 1/2 tablespoon garlic powder
  • Salt and pepper for seasoning
  • 1/4 cup nutritional yeast (optional)

Directions:

  1. In a large pan over medium heat, add the coconut oil and the tofu, and cook until the tofu starts to brown.
  2. Add in all the vegetables and seasonings, and cook for an additional 7 to 8 minutes or until the vegetables have softened.
  3. Serve warm with avocado toast, or use as a filling in vegan burritos, if desired.
