Here's a special treat for breakfast — sink your fork into creamy pancake rolls with lemon inside and out. I purposely make sure I have at least one blueberry on my fork with every bite, because the taste of them with lemon is a match made in heaven, not to mention that a pancake comes along with the deal. It's a wonderful way to start the day.

Serves 4

Ingredients:

For the pancakes

  • 1 cup flour
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons sugar
  • 1-1/2 teaspoons vanilla extract
  • 2 teaspoons baking soda
  • 6 dashes salt

For the filling and topping

  • 1 (8 ounce) package cream cheese
  • 2 tablespoons sugar
  • 1 lemon, zest and juice (for the filling)
  • 1 lemon, zest (for garnish)
  • 2 cups fresh blueberries

Directions:

For the pancakes

  1. In a medium-size bowl, whisk together all the ingredients until fairly smooth.
  2. To a medium-size nonstick skillet on medium heat, ladle in enough batter to just about cover the bottom of the pan. When the bottom side of the pancake turns a golden color, flip the pancake onto the other side. Cook until both sides are golden in color.

For the filling and topping

  1. Zest the lemons.
  2. In a food processor, add the cream cheese, sugar and the zest and juice from 1 lemon.
  3. Place a pancake onto a plate, and spread the cream cheese mixture on top.
  4. Add some of the blueberries on top of the cream cheese.
  5. Gently roll the pancake. Repeat the process for the remaining pancakes.
  6. Top the pancake rolls with more of the cream cheese mixture and the remaining blueberries.
  7. Garnish with the zest from the remaining lemon.
  8. Serve with maple, blueberry or your favorite syrup.
