Have some cauliflower lying around but not sure what to do with it? Here are three easy ways to make rice using cauliflower that can replace regular rice in almost any dish.

I'm sure most of us can agree that cauliflower isn't the most delicious vegetable in the produce department, but did you know you can transform this vegetable into a wonderful vegetable-based "rice" replacement? It's easy to take a boring head of cauliflower and make it into something completely delicious. So tasty, in fact, that even kids won't mind munching on it. This is also great for gluten-free diets, vegans or those just looking for something fun to try.

Basic cauliflower rice recipe

Basic cauliflower rice recipe

Serves 4-6

Ingredients:

  • 1 large head cauliflower, roughly chopped
  • 2 tablespoons water
  • 2 tablespoons butter (or dairy-free butter)
  • Salt and pepper, to taste

Directions:

  1. Add the cauliflower to a food processor, and lightly pulse until it resembles rice (do not over-pulse).
  2. Transfer the cauliflower rice to a microwave-safe bowl or dish, and add the water. Cook on high for 5 to 7 minutes or until the rice is nice and tender.
  3. Add the butter, season with salt and pepper, and serve warm as a side dish next to your favorite meal.

Cilantro lime cauliflower rice recipe

Cilantro lime cauliflower rice recipe

Serves 4-6

Ingredients:

  • 1 large head cauliflower, roughly chopped
  • 2 tablespoons water
  • 2 tablespoons butter (or dairy-free butter)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 fresh lime, juiced and zested
  • 1 large handful fresh cilantro, finely chopped

Directions:

  1. Add the cauliflower to a food processor, and lightly pulse until it resembles rice (do not over-pulse).
  2. Transfer the cauliflower rice to a microwave-safe bowl or dish, and add the water. Cook on high for 5 to 7 minutes or until the rice is nice and tender.
  3. Add the remaining ingredients, and mix very well.
  4. Serve warm as a side dish or in place of rice next to your favorite meal.

Tip

Serve this version with Mexican recipes because of the lime and cilantro flavors.

Thai infused cauliflower rice recipe

Serves 4-6

Ingredients:

  • 1 large head cauliflower, roughly chopped
  • 2 tablespoons water
  • 2 tablespoons butter (or dairy-free butter)
  • Salt and pepper, to taste
  • 1/4 to 1/2 cup coconut milk
  • 1 teaspoon curry powder
  • 1 teaspoon garlic powder
  • Pinch of crushed red pepper flakes
  • Salt and pepper for seasoning
  • 1 small handful fresh cilantro, finely chopped
  • Cashews and fresh lime for garnish (optional)

Directions:

  1. Add the cauliflower to a food processor, and lightly pulse until it resembles rice (do not over-pulse).
  2. Transfer the cauliflower rice to a microwave-safe bowl or dish, and add the water. Cook on high for 5 to 7 minutes or until the rice is nice and tender.
  3. To the rice, add the coconut milk, curry, garlic powder and red pepper flakes, and then season with salt and pepper, mixing well.
  4. Fold in the fresh cilantro, and add the rice to a serving plate. Garnish with cashews and limes, if desired.
  5. Serve warm as a side dish or in place of rice for your favorite Asian-inspired meal.
