Blue cheese-stuffed turkey sausage meatballs with raspberry balsamic glaze recipe

Makes 18-22 depending on size


For the meatballs

  • 3 ounces creamy Gorgonzola cheese
  • 1 pound turkey Italian sausage (or other sausage)
  • 1/2 cup Italian-style breadcrumbs
  • 1/2 onion, grated
  • 1 egg white
  • Salt

For the glaze

  • 1/2 cup raspberry preserves
  • 1/8 cup balsamic vinegar
  • 3 teaspoons Dijon mustard
  • Pinch of red pepper flakes
  • Pinch of salt


For the meatballs

  1. Roll the blue cheese in small balls about the diameter of a dime. Freeze for 30 minutes.
  2. Preheat oven to 375 degrees F. Line a baking sheet with a Silpat.
  3. In a large bowl, mix the sausage, breadcrumbs, grated onion and egg white together until just combined. Roll sausage mixture into small balls. Place the blue cheese in the middle, covering with meat.
  4. Bake until golden brown and cooked through, about 25 min, turning halfway through to brown both sides.

For the glaze

  1. In small saucepan over medium-high heat, combine all ingredients. Bring to a boil and then reduce heat and simmer about 5 minutes.
  2. Coat meatballs in sauce. Serve.
