Compound butters are so versatile and are the perfect little extra "something" to kick up a weeknight meal or impress your guests while entertaining! Wrapped up, labeled and pretty... they make a wonderful hostess gift, too! Here are five recipes to get you started... but let your imagination soar... the combinations of ingredients are endless!

These recipes can easily be halved and any seasonings can be adjusted to your liking. And remember... a pinch of kosher or sea salt brings out and heightens natural flavors.

Herb garlic butter recipe

Ingredients:

  • 2 sticks unsalted butter, room temperature
  • 1 tablespoon heavy cream
  • 2 cloves garlic, smashed and finely chopped
  • 1 tablespoon freshly chopped rosemary
  • 1 tablespoon freshly chopped thyme
  • 1 tablespoon freshly chopped sage
  • Pinch of salt and pepper

Citrus tarragon butter recipe

Ingredients:

  • 2 sticks unsalted butter, room temperature
  • Zest from 4 clementines (or 1 large orange)
  • Juice from 2 clementines (or juice from 1/2 orange)
  • 2 tablespoons finely chopped fresh tarragon
  • Pinch of salt

Blue cheese and chive butter recipe

Ingredients:

  • 2 sticks unsalted butter, room temperature
  • 4 tablespoons blue cheese (more or less depending on how strong the cheese is)
  • 2 tablespoons freshly chopped chives
  • Pinch of salt (only if necessary)

Smoked paprika jalapeño butter recipe

Ingredients:

  • 2 sticks unsalted butter, room temperature
  • 2 tablespoons smoked paprika
  • 2 jalapeño peppers, pulp and seeds removed, very finely diced
  • Pinch of salt

Spiced brown sugar butter with walnuts and raisins recipe

Ingredients:

  • 2 sticks unsalted butter, room temperature
  • 2-1/2 tablespoons dark brown sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup toasted walnuts, chopped
  • 1/4 cup raisins

Directions for all compound butters

  1. Add all ingredients to a large glass or steel mixing bowl. Using an electric hand mixer, beat all ingredients until well incorporated and fluffy. (If you do not have an electric hand mixer, you can do this by hand using a strong spoon, it will just take a bit more work.)
  2. Place a medium-size piece of plastic wrap onto a clean, flat surface. Using silicone spatulas, gather the butter together in the bowl, then spoon the butter mixture out of the bowl and onto the center of the plastic wrap.
  3. Grabbing the bottom portion of the plastic wrap, pull it up over the butter and begin forming the wrap around the butter, rolling and forming a log shape. Twist the ends of the plastic wrap and place butter in the fridge to set.

TIP

Compound butters are best eaten within a few days, but can be frozen until ready to use. To freeze the butter, wrap log in parchment paper, then plastic wrap or place in a zip-closed bag (sealing out the air), then finally wrap snugly in aluminum foil. Label the butter and place in the freezer for up to two months.
