These crispy, juicy and oh-so-flavorful pickle slices take just 10 minutes to assemble and about a week to pickle. Yes, we know that's a long time to let these delicious bites sit. But the longer they sit, the more juicy pickle flavor they have. The end result is well worth the wait!

Easy pickle recipe

Serves about 6


  • 3 cups sliced mini cucumbers
  • 2/3 cup sugar
  • 1 medium onion, sliced
  • 1 yellow pepper, sliced
  • 1/2 cup white wine vinegar
  • Salt and pepper


  1. In a medium size saucepan, heat sugar, salt and pepper and vinegar over medium-high heat until sugar dissolves, about 6-8 minutes. Remove from heat.
  2. Mix cucumbers, onion and pepper. Pour vinegar mixture over the vegetables and toss with salt and pepper. Pour mixture into 2 sterile pint-size Mason jars and refrigerate for 1 week, or until tangy and crisp.
