Waking up to go back to work, college or full-time mom duty is never an easy, or fun task, especially when you have to deal with schlepping the screaming kids back to school. Since it's frowned upon to drink at 6 a.m., why not eat a few of these mini breakfast treats?

I mean look at them! It's impossible not to smile when you're eating a mini blueberry pancake, are we right? Not only will these brighten your day, if only for two minutes, they'll be huge hits with your kids too. Now if only the pancakes could also make lunches and deal with your ornery boss...


Mini blueberry pancakes

Yields about 12 mini pancakes


  • 2 cups whole grain pancake mix (we used Bob's Red Mill)
  • 2 eggs
  • 2 tablespoons unsweetened applesauce
  • 1-1/2 cups milk
  • About 2/3 cup blueberries
  • 1/2 teaspoon vanilla
  • 1 tablespoon butter


  1. Mix the pancakes, eggs, applesauce, milk, blueberries and vanilla together.
  2. Heat butter in a nonstick skillet over medium heat. Using a tablespoon, measure out batter and pour into the skillet. Cook until the batter bubbles, then flip. Cook until the other side is golden brown.
  3. Serve each pancake with a drizzle of maple syrup.

Mini French toast muffins

Yields about 12 mini muffins


For the muffins

  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1-1/2 tablespoons egg whites
  • 1 teaspoon maple syrup
  • 1 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • Dash of salt

For the topping

  • 3 slices whole wheat bread
  • 1-1/2 tablespoons egg whites
  • 1-1/2 tablespoons milk
  • 1 tablespoon cinnamon sugar


  1. Preheat oven to 375 degrees F. Line a mini muffin pan with liners.
  2. Mix the milk, butter, egg whites and maple syrup in a bowl. Add in flour, sugar, baking powder and dash of salt, mix to combine. Pour mixture into the muffin liners, filling about 2/3 full.
  3. To make the topping, remove the crusts from the bread and chop into small cubes. Mix with egg whites, milk and cinnamon sugar. Top batter in the liners with French toast mix.
  4. Bake for about 15–20 minutes, or until a toothpick inserted in the middle comes out clean.

Mini Mason jar parfaits

Serves 4


  • 2 cups plain Greek yogurt (we used Chobani)
  • 2 cups crumbled muffins
  • 1 cup whipped cream
  • 1 cup fresh blueberries


  1. Layer 1/4 cup of muffins in a mini Mason jar. Top with 1/4 cup yogurt and 2 tablespoons blueberries. Repeat another layer. Top with 2 tablespoons whipped cream and brown sugar.
