It's easy to transform a favorite Italian salad into a sandwich. The fresh flavors included in this recipe for caprese-style sandwiches with basil vinaigrette dressing shine through!

Caprese-style sandwiches with basil vinaigrette dressing

Sometimes it's easy to go from salad to sandwich without much effort! For a Meatless Monday meal, try an Italian favorite — the caprese salad — as a sandwich. With a basil vinaigrette dressing and salad greens (save the extra dressing for your weekly salads), all you need are some juicy tomatoes, tasty mozzarella and hearty bread to make this meal great!

Caprese-style sandwiches with basil vinaigrette dressing

Serves 2

Ingredients:

For the dressing

  • 1 cup olive oil
  • 1/2 cup white wine vinegar
  • 1/2 cup fresh basil leaves, packed (or more to taste)
  • 2 garlic cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

For the sandwich

  • 4 slices thick, Italian-style bread
  • 2 ounces fresh mozzarella cheese, sliced to about 1/2-inch thick
  • 1 large tomato, sliced to about 1/2-inch thick.
  • 2 ounces mixed salad greens

Directions:

For the dressing

  1. Blend all the ingredients together in a food processor until smooth.
  2. Taste and adjust the seasoning as needed.
  3. Refrigerate until ready to use.

For the sandwich

  1. Toss the salad greens with about 2 tablespoons of dressing, just so the greens are lightly coated.
  2. Divide the salad greens evenly and pile them onto two slices of bread. To that, add a layer of sliced tomato, then the sliced mozzarella.
  3. Top with the remaining bread, slice in half, and serve immediately.

Salad as a sandwich is a fun idea!
