Who needs potato chips?

Craving a salty snack but really don't want to waste all the calories? Bake a few of these crispy veggie chips and enjoy snacktime without all the guilt. Plus, this means you can have one more glass of wine at happy hour.

These baked, not fried, snacks are crispy, crunchy and perfect with any of your favorite dipping sauces. Not only are they low in fat, each recipe is low in carbohydrates and can also be gluten-free (by subbing in GF flour and breadcrumbs).

Crispy Greek baked green bean fries

Who needs potato chips?

Yields about 20 fries

Ingredients:

  • 20 fresh green beans, tips removed
  • 1/3 cup all-purpose flour
  • 1-1/2 cups panko breadcrumbs
  • 2 tablespoons Greek seasoning
  • 1 egg, beaten

Directions:

  1. Preheat oven to 400 degrees F. Grease a baking dish with nonstick cooking spray.
  2. Mix the breadcrumbs and seasoning together.
  3. Dip each green bean in flour and then into the egg. Afterward, dredge each bean in breadcrumbs until fully coated.
  4. Place each bean on the baking sheet and bake for about 8 minutes. Flip and then bake another 4 minutes or until both sides are golden brown.

Serves about 4

Ingredients:

  • 2 medium yellow beets
  • 1 teaspoon olive oil
  • Salt and pepper

Mini zucchini chips

Who needs potato chips?

Serves about 4 (6 chips each)

Ingredients:

  • 1 medium zucchini
  • 1/4 cup all-purpose flour
  • 1-1/2 cups panko breadcrumbs
  • 1-1/2 tablespoons Italian seasoning
  • 1/4 cup Parmesan cheese
  • 2 eggs, beaten

Directions:

  1. Preheat oven to 400 degrees F. Grease a baking dish with nonstick cooking spray.
  2. Mix the breadcrumbs, Italian seasoning and cheese together. Beat the eggs lightly.
  3. Thinly slice each zucchini using a mandolin. Dip each zucchini slice in flour, then egg and then into the breadcrumbs.
  4. Bake for about 8 minutes, then flip and bake another 3 – 4 minutes.
