It's time to add some excitement to your weeknight dinner by making one of these sweet, savory and unique plank grilled salmon recipes. The plank gives each fillet a rich, earthy flavor.

Not only will cooking salmon on a plank give it a more even cook (and richer flavor), it'll also make it so much easier to clean your grill. During these sweltering summer months, this means less time sweating and more time eating! You can also easily double these recipes for a summer picnic or party!

Grilled salmon with pico de gallo

Grilled salmon with pico de gallo

Serves 2

Ingredients:

  • 2 salmon fillets (at least 4 ounces)
  • 2 tablespoons olive oil
  • Salt and pepper
  • 3 teaspoons Mexican seasoning
  • 2 tablespoons sour cream
  • 2 tablespoons pico de gallo
  • Fresh cilantro for garnish

Directions:

  1. Soak a wooden plank in water for at least 2 hours. Liberally coat salmon fillets in olive oil. Then top with 1-1/2 teaspoons of Mexican seasoning (on each salmon fillet) and top with added salt and pepper.
  2. Preheat grill to medium-high heat. Heat the plank for about 2 minutes on direct heat.
  3. Move to indirect heat and place salmon fillets on top. Close the grill and cook until salmon is fully cooked, about 10 minutes.
  4. Once cooked, let salmon cool for about 3 minutes. Then top each fillet with 1 tablespoon sour cream. Top the sour cream with 1 tablespoon pico de gallo and fresh cilantro for garnish.

Sweet and sour glazed salmon

Sweet and sour glazed salmon

Serves 2

Ingredients:

  • 2 salmon fillets
  • Salt and pepper

For the marinade: 

  • 2 tablespoons dark sesame oil
  • 2 tablespoons orange preserves (we used orange marmalade)
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • Salt and pepper to taste

Directions:

  1. Soak a wooden plank in water for at least 2 hours.
  2. In a bowl, mix all of the marinade ingredients together until thick. Gently coat each salmon filet in the marinade, being sure to coat the top and sides. Chill for at least an hour.
  3. Once chilled, preheat grill to medium-high heat. Heat the plank for about 2 minutes on direct heat and then move to indirect heat and place the marinated salmon fillets on top. Close the grill and cook until salmon is fully cooked, about 8-10 minutes (marinade will be bubbly).

Brown butter & bourbon salmon

Brown butter & bourbon salmon

Serves 2

Ingredients:

  • 2 salmon fillets (skin on)
  • 2 tablespoons butter, melted
  • 1/4 cup brown sugar
  • 2-1/2 tablespoons bourbon (we used Jim Beam)
  • Dash of salt and pepper

Directions:

  1. Soak a wooden plank in water for at least 2 hours.
  2. Meanwhile, mix the sauce by whisking the butter, brown sugar and bourbon together. Coat each salmon fillet liberally with 1/3 of the sauce.
  3. Preheat grill to medium-high heat and place plank on direct heat for about 2 minutes. Move to indirect heat and add salmon, skin side down. Cover and cook for about 5 minutes. Open and coat with remaining sauce. Cover and cook another 5 minutes or until salmon is done.
