A homemade alternative to dairy
Coconut milk is not only delicious, it's easy to make right at home. Only organic shredded coconut and hot water result in this tasty healthy milk replacement or substitute for dairy.
Enjoy this treat any way you would normally use cow's milk.
DIY organic coconut milk recipe
Yields 6 servings
Ingredients: 2 cups organic unsweetened shredded coconut
4 cups boiling water
Tip: You can easily sweeten or flavor your coconut milk using liquid stevia or pure vanilla extract To a blender (we used a Vitamix), add the 2 cups of shredded coconut and the 4 cups of boiling water. Blend on high for 45 seconds or until the mixture is smooth.
Over a bowl, place a strainer. Line the strainer with the cheesecloth and pour the mixture into the center. Gently twist and squeeze the cheesecloth to remove as much of the liquid as possible.
Store the coconut milk in a jar in the refrigerator for up to several days.
