Easy Maple Pecan Granola Bars

If you're in need of a healthy after-school snack idea or grab-and-go breakfast, make these easy granola bars.

One of my new favorite food finds is Sahale Snacks Maple Pecans, an addictive combination of pecans, walnuts, cherries, and apples glazed with maple and cinnamon. To keep myself from eating the entire package in a sitting, I add them to recipes to lend their sweet crunchiness to other dishes. These easy granola bars are perfect for after-school snacks or as a grab-and-go breakfast.

Easy Maple Pecan Granola Bars

Ingredients:  

  • 2 cups old-fashioned oats

  • 1 cup shredded coconut

  • 1 cup Sahale Snacks Maple Pecans 

  • 1/2 cup toasted wheat germ

  • 3 tablespoons coconut oil

  • 2/3 cup agave nectar

  • 1/4 cup lightly packed brown sugar

  • 1/2 teaspoon salt

  • 2 teaspoons pure vanilla extract


Directions:

  1. Preheat the oven to 350 degrees F. Spray an 8x12-inch baking dish with cooking spray and line the bottom with parchment paper.

  2. On a large rimmed baking sheet, combine oats and coconut, spreading evenly in a single layer. Bake for 10 to 12 minutes, stirring occasionally.

  3. Transfer toasted oats and coconut to a large mixing bowl. Add maple pecans and wheat germ.

  4. Reduce the oven temperature to 300 degrees F.   In a small saucepan, combine oil, agave, brown sugar, and salt. Warm over medium heat, stirring, until brown sugar dissolves. Bring to a boil then remove from heat.

  5. Stir vanilla into brown sugar mixture then pour over toasted oat mixture, tossing to evenly coat.

  6. Transfer oat mixture to the prepared baking dish and use a spatula to press mixture evenly into the dish.

  7. Bake for 30 minutes or until golden brown.

  8. Remove dish from the oven and let cool on a wire rack for  2 hours. Cut into bars. Serve at room temperature. Keep completely cooled bars in an airtight container for up to 1 week.
